Description
Hailing from the Bordeaux region of France, the canelé [kan. le] is a small pastry made from a rum and vanilla-infused custard, then baked to deep caramel perfection. The outside has a crunchy, slightly-chewy texture, while the inside is velvety-smooth custard, baked until just set. The flavor profile is best described as a cross between creme brulee and churros, but the addition of fresh vanilla bean and hint of rum really put these into a class of their own.
